Sufra Dayma: Savoury Pastry Rolls By Moushira Abdel-Malek Serves 24 Ingredients: 24 puff pastry sheets (almost thawed) 4 medium potatoes (cooked, mashed) 250 gms spinach leaves 3 or 4 sprigs of fresh coriander 200 gms smoked cold cuts (squared into pastry size) 1 cup grated tasty cheese 1 egg (lightly beaten) 2 tbsp butter (softened) Salt + pepper Method: Sauté spinach and coriander in a tiny piece of butter. Cover and leave to wilt over low heat for a few minutes. Remove into a strainer to get rid of excessive waters. Press by a back of a large spoon to squeeze out any moisture. Preheat oven to 180 degrees. Combine potato, butter, salt and pepper in a bowl. Mix well to combine. Place a spoonful of the potato along edge of one pastry piece. Top with half a spoonful of spinach, a piece of cold cuts and a spoonful of cheese. Roll up, securing sides. Repeat with remaining pastry sheets and fillings. Place onto lightly greased baking trays. Bake until puffed and goldened. Serve warm.
