Sufra Dayma: Mozzarella and smoked turkey salad By Moushira Abdel-Malek Serves 4 Ingredients: 250 gms high quality mozzarella cheese 250 gms cherry tomatoes (washed) 1-2 bunches arugula (washed, drained), (stems removed) 1 bunch basil leaves (torn) 200 gms smoked turkey (finely diced in small cubes) 2 tbsp balsamic vinegar 1 tbsp extra virgin olive oil Salt + pepper Method: Slice the mozzarella cheese. Dice or cube the smoked turkey in bite sized cubes; (buy it in one block not sliced). In a large serving bowl, mix all the ingredients. Toss well to combine. Serve as a side dish, a starter or with buttered crusty bread.
