Sufra Dayma: Greek Grilled Chicken By Moushira Abdel-Malek Serves 4 Ingredients: 4 boneless chicken breasts (halved) 2 tbsp. onion juice 1 tsp garlic powder 1 cup finely chopped tomato ¼ cup Greek black olives (pitted, sliced) ½ cup crumbled feta cheese 1 large green capsicum (seeded, finely chopped) 1 medium sweet white onion (finely sliced) Salt +pepper + oregano 1 tbsp extra virgin olive oil + juice of one lemon + 1 tsp white vinegar Method: Marinate chicken breasts in combined onion juice, garlic powder and oregano. Refrigerate at least for four hours. Grill and distribute two in each serving plate. In a large bowl, combine all other ingredients. Mix well to combine. Season and add oil, lemon juice and vinegar. Toss well. Divide on top of grilled chicken breasts and serve.
