Sufra Dayma: Chard and Spinach with Garlic and Parmesan By Moushira Abdel-Malek Serves 6 Ingredients: 1 kg spinach (trimmed, well washed) 2 bunches chard (trimmed, well washed) 80 gms Parmesan (finely grated) 2 garlic cloves (crushed) 50 gms butter Juice of half a lemon Salt (to taste after Parmesan) + Black pepper + grated nutmeg (optional) Method: Roughly chop spinach and chard. Melt butter in a large frying pan on medium heat. Cook garlic until fragrant. Add spinach and chard. Increase heat to high and cook, stirring occasionally for 3-5 min, until vegetables wilt and are tender. Season with pepper and nutmeg only. Remove from heat. Stir in grated Parmesan and serve. Use salt (to taste) at table.
