Sufra Dayma: Lemon Tart By Moushira Abdel-Malek Ingredients: 500 gms plain flour 6 egg yolks 250 gms icing sugar 250 gms butter Lemon Curd: 1 cup lemon juice 1 cup cream 4 whole eggs 200 gms castor sugar Method: In an electric mixer, add butter, flour, sugar and mix until it turns into fine crumbs. Add egg yolks, one at a time, until pastry comes together. Remove and chill covered in fridge for one hour. Roll out into 5 ml thickness and cover the base and edges of a greased and floured flan. Place in a fridge again and cool. In a bowl, add lemon curd ingredients and whisk thoroughly. Pour into pastry flan and bake in a preheated oven at 180 degrees Centigrade, for approximately 20 minutes and allow to cool. Dust with icing sugar and serve.
