Sufra Dayma: Oriental baked chicken By Moushira Abdel-Malek Ingredients: 1.5 kg whole chicken 1 onion (whole) peeled 3 ripe tomatoes (sliced) 3 green bell peppers (sliced) 1/2 cup lemon juice 2 cups chicken stock 1 bouillon cube 2 tbsp crushed garlic 1 large bunch of coriander leaves (chopped) Oil Salt + pepper + 2 cardamom seeds + 1 bay leaf Method: In a large cooking pan, boil chicken in enough water with cardamom and bay leaf, only until half done. Remove and strain from stock. Cut into 8 parts and brown in oil on both sides. Remove on kitchen paper towels. Strain 2 cups of stock and dissolve bouillon while bringing to the boil. In a frying pan, gently fry garlic only until yellowish. Add coriander and stir, then add lemon juice. Pour over strained stock and bouillon. Place chicken parts in an oven-proof baking dish. Season stock mixture and pour over chicken. Top alternately with tomato and green pepper slices. Bake in a preheated hot oven at 220 degrees until chicken parts are goldened and well done. Serve with mashed potatoes and sautéed vegetables.
