Sufra Dayma: Baked Chicken Drumsticks By Moushira Abdel-Malek Serves 4 Ingredients: 6-8 chicken drumsticks 1 large onion (finely sliced) 1 garlic clove (crushed) 1 large red capsicum (deseeded, sliced) 1 large yellow capsicum (deseeded, sliced) 2 large zucchini ( scrubbed, sliced) 1/2 cup pitted black olives (sliced) 1 tbsp lemon juice 1 tbsp balsamic vinegar 1/4 cup extra virgin olive oil Salt + pepper + thyme Method: Preheat oven to 220 degrees. Pour half the quantity of oil in an oven-proof deep bowl. Combine all other ingredients together and toss well in another bowl. Transfer to oven- proof bowl, trying to keep chicken drumsticks on top as much as possible. Bake uncovered until chicken is cooked through and goldened. Serve with boiled or mashed potatoes.
