Sufra Dayma: Oriental baked sausage By Moushira Abdel-Malek Serves 6 - 8 Ingredients: 1 kg butcher-made sausages 3 large onions (thinly sliced) 3 large bell peppers (green, red, yellow) 3 red tomatoes (chopped) Butter + oil Salt + pepper + thyme + basil + allspice + dash of Tabasco Method: Bake bell peppers, uncovered, or grill, until black patches appear on skin. Remove thin membrane and slice. In the meantime, heat butter and oil in a large pan. Stir fry sausages until goldened, then remove with a slotted spatula. Leave aside, covered. Add onion and stir, only until translucent. Add peppers and stir for a few moments. Add spices, sausage and tomatoes. Stir to combine all ingredients. Remove into a baking dish. Cover and bake in a preheated hot oven of 220 degrees, for 30-35 minutes. Uncover for an extra 5 minutes, then remove from oven. Allow to set before serving. Serve with crusty bread and coleslaw, or any other creamy salad.
