Serves 8 - 10 Ingredients: 1 3/4 cups self-raising flour 1/4 cup plain all-purpose flour Pinch of salt 3/4 cup brown sugar 2 tbsp molasses 1 cup hot brewed tea 2 eggs (lightly beaten) 1 tsp vanilla extract 1 1/2 cups dates (pitted, chopped) 1/2 tsp ground cinnamon Pinch grated nutmeg 125 gms melted butter Method: Preheat oven to 160 degrees. Lightly grease a 10 x 20 loaf pan. In a glass bowl, soak dates in hot tea. Allow to cool. Sift flours into a large bowl. Stir in sugar and spices. Add cooled date mixture, molasses, butter, eggs and vanilla. Stir until just combined. Pour mixture into prepared pan. Bake for approx. 45 minutes, or until firm to the touch. Allow to cool on wire rack. Slice and serve with butter to spread, or any other spread preferred; jam, marmalade, or toasted with cream.
