Sufra Dayma: Chocolate Walnut Muffins By Moushira Abdel-Malek Makes 12 Ingredients: 11/2 cups all-purpose flour 1/2 cup sugar 1 tbsp molasses 1 cup sour cream 5 tbsp whole milk 2 eggs + 1 tsp vanilla extract 2 heaped tsp baking powder 100 gm dark continental chocolate (chopped) 2 tbsp dark cocoa powder 1/2 tsp salt 1/2 cup chopped walnuts 4 tbsp soft butter + 1 tsp extra Method: In a small saucepan, heat extra butter to melt. Add chocolate. Stir over low heat to melt. Leave to cool completely, then add walnuts. In the meantime, mix butter, sugar, molasses and salt. Beat to a creamy consistency. Add sour cream and milk. Beat in to combine. Stir in the eggs one at a time with the vanilla. Beat well to combine. Stir in chocolate and walnut mixture with a spatula. Combine well. Sift flour, baking powder and cocoa together into mixture, stirring it gently. Fill a greased and flour dusted 12-muffin pan with mixture and bake in a preheated oven of 180 degrees, for approx.. 30 minutes, or when an inserted skewer comes out clean. Allow muffins to stand in pan until almost completely cool.
