Sufra Dayma: Pecan or Walnut Cookies By Moushira Abdel-Malek Makes approx. 60 Ingredients: 4 cups all-purpose flour 1 ½ tsp salt ¼ tsp baking soda 1 cup sugar 2 large eggs (at room temp.) 1 tbsp vanilla extract 1 tbsp molasses 2 ½ cups pecans (or) walnuts (lightly toasted, coarsely chopped) 375 gms butter Method: Heat oven to 160 degrees. Beat butter and sugar with an electric mixer, until creamy and smooth. Add eggs, vanilla and molasses; one at a time, beating well between additions, scraping down the sides of the bowl. Mix well, in another bowl, flour, salt and baking soda. Add to butter mixture. Beat to combine. Add chopped nuts and beat again gently. Form the dough into 2.5 cm balls. Using your hand, press down gently to flatten. Place on an ungreased non-stick baking pan, or on an ungreased cookie sheet. Transfer to preheated oven and bake until cookies are just beginning to slightly brown around edges; (15-20 min. approx.). Allow to cool completely before serving or storing.
