A good cookie every now and then never hurt anyone. So why not try this recipe at home and see how great it can be to cook for yourself. Enjoy! Ingredients: 1/2 cup soy margarine 1 medium or large banana 1 cup Sucanat or brown sugar 1/2 cup natural (or organic) peanut butter 1 teaspoon almond or vanilla extract 1 teaspoon cinnamon 1 cup whole wheat flour 2 teaspoons baking soda 3 cups oatmeal Optional: 1/4 cup chocolate chips 1/4 cup raisins 1/4 cup chopped peanuts Preparation: Preheat oven to 350 Fahrenheit. Mash banana until fairly smooth in a large bowl using a fork, beating it with a whisk after you are done mashing it helps it smoothen nicely. If using Earth Balance soy margarine, 1/4 of the whole tub is 1/2 cup. Cut one centimeter off the top of the 1/2 cup of soy margarine. Add the soy margarine and peanut butter to your mashed banana, mashing the soy margarine with a fork. Add sugar and almond extract and whisk until smooth. In a separate bowl, mix the flour, baking soda and cinnamon. Add to wet ingredients, then mix in oatmeal. Add chocolate chips, raisins and/or chopped peanuts if desired. Take a spoonful of the mixture and roll it into a ball, slightly flatten and place on cookie sheet. Once all cookies are on the sheet, bake for 10 to 20 minutes (depending on your oven).
