A delight. This recipe is a great combination of bread and cookie and will undoubtedly keep the hand reaching for some more goodies. To top it off, it's vegan and healthier than most cookies on the prowl. Sit down, put on a film and indulge yourself with some yummy eating. Ingredients: 1 1/4 cup flour (I use unbleached, all purpose) 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup sugar 1/2 cup oil (I use canola) 1/2 teaspoon vanilla 4 tablespoons nondairy milk 1 banana , mashed 1 teaspoon baking powder handful walnuts, crushed Preparation: Preheat oven to 350 degrees Fahrenheit. Mix together flour, soda and salt in a small-medium bowl and set aside. Lightly grease a cookie sheet. In a large bowl, mix together oil, sugar, milk, and vanilla. Mix in mashed banana and baking powder. Add ingredients in the small bowl and stir well. Once it is well stirred, lightly mix in the crushed walnuts. Drop by tablespoons onto prepared cookie sheet. Bake 9-12 minutes (depending on your oven). BM
