This vegan soup is a great autumn recipe. Ingredients: * 1 tbsp olive oil * 1 small onion, diced * 1 clove garlic, minced * 1 red bell pepper, chopped * 1 sweet potato, pealed and chopped * 1 cup tomato juice * 2 cups vegetable broth * Salt, pepper, lemon juice, and chili powder to taste Heat olive oil in pot or deep skillet. Fry onion, garlic, pepper, and sweet potato over medium heat for 10 minutes, stirring occasionally. Add broth and tomato juice. Bring to a boil, then lower heat and simmer until potatoes are tender, about 20-25 minutes. Process most of mixture in a blender or food processor. Return to pot on low heat. Season with salt, pepper, chili powder, and lemon juice to taste. Allow to simmer another 5-10 minutes. Serves 2-3.
