Sufra Dayma: Zesty Chicken Drumsticks Serves 4 Ingredients: 1 kg chicken drumsticks 1 large leek (halved, washed and thinly sliced) Lemon rind of 2 lemons (stripped) 250 gms baby carrots (or) sliced carrot 1 cup dry white wine 1/2 cup lemon juice Salt + pepper + dry tarragon + allspice + grated nutmeg Butter + oil Method: Season chicken with all seasoning. Heat butter and oil in a large frying pan. Brown chicken in batches for 6-8 minutes each batch until crispy. Return all chicken to pan. Add leek and cook until leek is wilted. Add lemon rind and cook for a couple of minutes. Pour lemon juice and wine into pan. Allow flavours to combine for a few seconds. Stir, add carrot, then cover over low heat, stirring occasionally, until chicken is cooked. Remove the rind. Taste and adjust seasoning, if necessary. Serve with boiled, buttered potatoes.
