Sufra Dayma: Pasta with Salmon and Broccoli By Moushira Abdel-Malek Serves 4 Ingredients: 300 gms penne pasta 350 gms broccoli (trimmed, cut into small florets) 400 gms smoked salmon (shredded into bite shreds) 2 tbsp plain flour 2 cups milk 1/4 cup cooking cream 3/4 cup shredded mozarella (or) grated yellow cheese 1/3 cup grated cheddar cheese 1 lemon rind (finely grated) 1 tbsp chopped chives Butter + oil Salt + pepper Method: Cook pasta in a large saucepan of boiling, salted water until tender. Meanwhile, lightly grease an eight-cup-capacity baking dish. Sprinkle some breadcrumbs, only to coat. Heat butter and oil in a large saucepan over low heat. Add flour. Stir to combine. Remove from heat. Add milk and cream while stirring. Return to medium heat. Cook, stirring until smooth. Stir in cheddar cheese. Season to taste. Cook broccoli in boiling water, steam or microwave until bright green and tender. Drain. Rinse pasta under hot water. Drain and return to saucepan. Add cheese sauce, broccoli and salmon. Stir to combine. Spoon pasta into baking dish. Combine mozarella, lemon rind and chives in a small bowl. Sprinkle mixture over pasta. Bake in a preheated oven of 200 degrees until top is golden and crisp. Serve hot.
