Sufra Dayma: Mexican Chicken By Moushira Abdel-Malek Ingredients: 1 kg chicken breast fillets (cubed) 2 large yellow bell peppers (diced) 1 large tomato (finely diced) 2 large onions (chopped) 1 tsp crushed garlic 1 tbsp tomato paste 120 ml white vinegar 120 ml extra virgin olive oil Butter + oil Salt + pepper + rosemary + thyme + basil + hot chilli (optional) Method: In a large cooking pan, heat some butter and oil. Add onion and stir until only translucent. Add garlic and chicken. Stir to lightly brown. Add bell pepper, tomato, paste and seasoning. Stir to combine well. Add vinegar and olive oil. Stir gently and cover pan. Allow to cook over medium heat until chicken is cooked through. Add hot water (if needed). Remove from heat and serve with rice.
