Sufra Dayma: Date, Nuts and Molasses Loaf By Moushira Abdel-Malek Yields 12-15 slices Ingredients: 200 gms plain white flour 2 tsp baking powder 1⁄2 tsp salt 1 large egg + vanilla extract 125 mls whole milk 75 gms sugar 60 mls molasses 50 gms dates (pitted, chopped) 50 gms walnuts (chopped) 1⁄4 tsp each: ginger + cinnamon + nutmeg 75 gms butter (softened) Method: Sieve all dry ingredients together in a large bowl. In another bowl, add egg, vanilla, milk, butter, sugar and molasses. Beat with an electrical blender until well combined and creamy. Add sieved ingredients, folding gently to mix. Beat at low speed to integrate. Gently fold in with a spatula, dates and walnuts. Pour into lightly greased, 400 gm non-stick loaf tin. Bake in preheated oven at 180 degrees (apporx. one hour). Allow to cool in tin. Remove onto a wire rack to completely cool. Slice and serve.
