Sufra Dayma: Onion Soup By Moushira Abdel-Malek Serves 6-8 Ingredients: 1 kg chopped onions (thinly sliced into wings) 250 mls dry white wine 2 cups broth 1 tsp sugar 1 tbsp flour 300 gms grated Gruyére cheese French baguette bread (diagonally sliced) 300 gms butter 1 clove garlic Salt + pepper + grated nutmeg Method: Heat a large cooking pan. Melt butter and add onions over medium heat, giving it a stir every 5 minutes. Add sugar when onion becomes translucent. Keep cooking until it caramelises and browns, (without burning). Sprinkle flour and stir for 3 minutes. Add wine and leave to thicken, stirring. Add broth and stir. Meanwhile, toast baguette slices. Chop garlic clove in two. Rub hot bread slices with garlic halves. Season onion soup (to taste). Bring to the boil, then pour into serving bowls. Place two slices of bread on top of each bowl. Generously add grated Gruyére and place under the grill until cheese is bubbly. Serve immediately. N.B.: This recipe, by experience, has proven to be the best ever. Enjoy and Happy Valentine's Day...
