Sufra Dayma: Baked chicken with yoghurt By Moushira Abdel-Malek Ingredients: 1 kg. chicken fillets (thighs or breasts) 1 cup plain yoghurt 1 tsp. crushed garlic 2 tbsp. lemon juice 1 tbsp oil Salt + pepper + oregano + curry (optional) Method: Season chicken pieces with a pinch of salt and pepper. Coat a non-stick baking pan or tray with half the quantity of oil. Make a mixture of the lemon juice, garlic, remaining oil and season with all seasoning. Marinate chicken well in mixture, (better if left in marinade for overnight, refrigerated). Beat yoghurt and slightly salt it. Place chicken in baking tray and pour yoghurt over. Bake in a preheated moderate oven until chicken pieces are goldened. Serve with sautéed vegetables, mashed potatoes and a green salad.
