Serves 6-8 Ingredients: 3 cups mashed sweet potato 3 whole eggs 100 gm castor and brown sugar 200 ml pouring cream 100 gm melted butter 1 tbsp vanilla + 1 tsp ground cinnamon + pinch of grated nutmeg
Syrup: 1 cup castor sugar 1.25 cups of water Juice of half a lemon 1 tsp ground cinnamon 2 tbsp maple syrup (optional)
Method: Beat eggs vigorously, until pale and fluffy. Add vanilla, cinnamon and nutmeg. Add sugar and beat until mixture forms ripples. Beat in cream. Add molasses and sweet potato. Beat gently until all ingredients incorporate well. Bake in a lightly buttered baking tray, into a preheated oven of 200 degrees centigrade.; for approximately 45 minutes. When bake is out of the oven, add warm syrup. Serve bake when warm. When it cools off completely; refrigerate and serve cold. Delicious both ways. Syrup: Combine sugar and water. Dissolve over medium heat. When brought to the boil; add lemon juice and cinnamon. Allow to boil for five minutes only. Allow to cool until warm; then pour over very hot bake. Leave to incorporate for almost ten minutes then serve.
