By Moushira Abdel-Malek Makes 8 Ingredients: 1 cup self-raising flour (sifted with a pinch of salt) 1/3 cup castor sugar 1/2 cup milk 1/4 cup cocoa powder 1 egg (lightly beaten) Vanilla extract 80 gms butter Method: Preheat oven to 180 degrees. Line 8 x 1/3 cup capacity muffin holes with paper cases. Combine flour and sugar in a bowl. Place milk and butter into a saucepan over medium heat. Heat until butter melts and mixture is hot. Remove from heat. Add cocoa. Whisk until smooth. Add egg, vanilla and milk mixture to flour mixture. Stir to combine. Spoon mixture into muffin holes so they are two- thirds full. Bake for 20 minutes or until a skewer inserted into centre comes out clean. Set aside to cool then serve.
