Daily Ramadan Recipe #10 - Chicken fajitas with cheese

Chicken fajita is a good choice for those who want a healthy but tasty way to prepare boneless chicken. Incorporating some veggies like colored peppers, olives, and other ingredients makes it lighter and boosts the nutritional value.
With a bit of cheddar cheese on top you'll have a quick, easy, Mexican-inspired dish.
Ingredients:
1/2 kilo boneless chicken
1/4 kilo mushroom, sliced
1 large yellow pepper, sliced thinly or chopped
1 large red pepper, sliced thinly or chopped
4 slices cheddar cheese (optional)
1/2 cup mozzarella cheese (optional)
Directions:
1. Wash the chicken with water and lemon and add some salt and pepper
2. Cut the chicken into small pieces like those used for shawerma
3. Heat 2 tablespoons of oil in a pan and add the chicken
4. Cook until the chicken is golden
5. Add the mushrooms and peppers to the pan
6. Add some olive slices
7. Stir for 30 seconds
8. Add 1/2 cup water and cover the pan
9. Put the mixture onto a pyrex dish or other oven-safe serving plate
10. Add the cheddar and mozzarella cheese on top
11. Put the dish into a hot oven for one minute to melt the cheese
12. Serve hot with rice or put in a sandwich or tortilla
