Sufra Dayma: Grilled Fish Fillets with Lemon Pesto By Moushira Abdel-Malek Serves 4 Ingredients: 4 x 200 -250 gm firm white fish fillets 2 garlic cloves (peeled) 2/3 cup basil leaves 1 tbsp grated lemon rind 1 tbsp lemon juice 1/4 cup grated Parmesan cheese 2 tbsp extra virgin olive oil + 1 tsp extra Salt + pepper Method: Brush fillets with extra teaspoonful of oil. Sprinkle with salt and pepper evenly. Grill, covered, for 4 minutes on each side. While fish is grilling, combine salt, basil, garlic, cheese, olive oil, lemon rind and juice in a food processor. Process until finely minced. Serve grilled fish aside with pesto and boiled potato.
