Sufra Dayma: Hamburger kings By Moushira Abdel-Malek Serves 4 Ingredients: 500 gms beef mince (regular, not lean) 1 medium brown onion (grated) 1 tbsp tomato sauce 1 tbsp Worcestershire sauce 1 egg (lightly beaten) 4 slices tasty cheese 4 hamburger buns (split, toasted) Barbecue sauce, shredded lettuce, sliced tomatoes, sautéed onion slices, hot sauce (optional), mustard 2 tbsp olive oil Salt + pepper + thyme + allspice Method: Combine mince, onion, sauces, egg, breadcrumbs and seasoning in a bowl. Mix well. Using wet hands (helps to shape patties and form smooth surfaces for even cooking), shape mixture into 4 patties, about 1cm- thick. Place onto a plate. Cover. Refrigerate for one hour or more. Heat oil in a large frying pan over medium heat. Cook patties for 5 minutes each side or until cooked through. Place a cheese slice onto each patty. Cover frying pan with a lid and cook for 30 seconds to melt cheese. Spread barbecue sauce, and mustard over bun bases. Top with lettuce, tomato slices, patties and then onion. Sprinkle with hot sauce. Serve with French fries.
