Sufra Dayma: Ice-Cream with Chocolate Sauce By Moushira Abdel-Malek Serves 4 Ingredients: 1 cup whipped cream (créme chantilly) 2 1/2 cups whole milk Vanilla ice-cream Chocolate ice-cream Roasted slivered almonds (to serve) Chocolate Sauce 1 cup sugar 1 cup dark unsweetened cocoa powder (plus extra for dusting) 1 tbsp instant coffee Method: To make the chocolate sauce; put the sugar and 1 1/2 cups water in a saucepan. Stir, bring to the boil, then remove from heat and stir in the cocoa and coffee. Allow to cool. Put the milk and chocolate sauce in a bowl and mix until well blended. Divide between 4 tall glasses. Add one scoop each of vanilla and chocolate ice-cream. Top each with a dollop of whipped cream and dust with cocoa. Sprinkle with the almonds. Serve with long spoons and straws.
