By Moushira Abdel-Malek Serves 4 Ingredients: 4 salmon fillets (200-220 gms each) 800 gms potatoes 2 tbsp finely chopped fresh dill 1 tbsp olive oil Salt + pepper Dressing: 1 tbsp lemon juice 1 tbsp Dijon mustard 4 tbsp sour cream 3 tbsp horseradish cream 3 tbsp good quality mayonnaise (or) salad cream One small red onion (finely diced), or, 2 tbsp finely chopped chives Method: Remove any bones from salmon fillets. Season with salt and pepper. Boil potato until tender. Drain, peel and cut into two cm cubes. Mix dressing ingredients well together. Add half quantity to potato. Heat oil in a non-stick cooking pan. Add salmon fillets. Cook for two minutes on each side. Add dill. Remove from pan and cover for one to two minutes. Place in serving dishes. Pour remaining half of dressing over salmon. Add potato with dressing aside salmon and serve immediately.
