Sufra Dayma: Spicy Cheesy Chicken Wraps By Moushira Abdel-Malek Makes approx. 20-24 Ingredients: 1/2 kg chicken breast fillets (cut into strips) One onion (thinly sliced) 1 tsp crushed garlic One medium tomato (skinned, finely diced) Yellow + red capsicum (half of each, julienned) Butter + oil Salt + pepper + allspice + nutmeg + sweet paprika Uncooked Ingredients: 200 gms of each: Mozarella, Cheddar, Gouda cheese (grated) 200 gms sour cream 1 small carton yoghurt 2 tbsp salad cream 1 tbsp ketchup Tabasco sauce (optional) Salt + pepper 2 vacuum packs soft flour tortilla bread Method: Stir fry chicken in butter and oil to slightly brown. Remove with a slotted spoon. Add onion to same pan. Stir gently until wilted. Add garlic, capsicum and season. Stir and add tomato, then chicken. Cover and leave to cook in its juices, over low heat, stirring occasionally. Add a very small quantity of water, only if needed. When chicken is done, remove form heat and leave to cool off, then add all other uncooked ingredients. Mix well and fill the centre of each tortilla with a quantity of the mixture and fold cylindrically. Place wraps in a non-stick baking tray. Bake in a preheated oven of 180 degrees for 5-7 minutes only to melt cheese in filling. Serve immediately.
