Sufra Dayma: Steak with Pasta, Tomatoes and Olives By Moushira Abdel-Malek Serves 4 Ingredients: 400 gms sirloin steak 300 gms spaghetti 200 gms green string beans (trimmed, chopped into one inch) 200 gms cherry tomatoes 200 gms rocket leaves 1 onion (finely sliced) 20 black olives (pitted, halved) 1 large bunch parsley leaves (chopped) 1 handful basil leaves (torn) 1 hot chilli (finely sliced) 100 gms Parmesan (shaved) 2 tbsp olive oil Butter + oil Salt + pepper Method: Cook steaks in a pan with butter and oil. Gently fry on both sides. Season, cover, and simmer: 5 minutes for medium and 8 minutes for well done. Remove to a board. Trim off fat and slice thinly. Add beans, tomatoes and onion to pan. Cover and simmer for 5 minutes. Return sliced steaks to pan with olive oil, olives, parsely, chilli and rocket. Season and mix well. Cook spaghetti al dente in a large pan of salted boiling water. Drain and add to steak mixture. Mix gently and transfer to serving dish. Scatter torn basil and Parmesan shavings on top.
