Sufra Dayma: Zesty roast potatoes By Moushira Abdel-Malek Ingredients: 1 kg new potatoes (scrubbed and patted dry) 2 tbsp freshly squeezed lemon juice 1 tbsp dry oregano or thyme 1 whole garlic head (separated with skin on) 1/4 cup extra virgin olive oil Salt + pepper Method: Cut potatoes into uniformly sized one x one inch pieces. Place them in a large glass bowl. Add all other ingredients. Mix them all well by hand. Drizzle some extra virgin olive oil in a non-stick oven pan. Place potato pieces, skin side down, in one layer, filling baking pan. Pour over juices on top. Fill in all cavities with garlic cloves. Preheat oven to a moderate 200 degrees. Bake potatoes uncovered until goldened and done. Serve as a side dish with pot roast meat or chicken.
