Sufra Dayma: Creamy Tuna and Basil Pasta By Moushira Abdel-Malek Serves 4 Ingredients: 400 gms penne pasta 500 gm jar Italian tomato pasta sauce 425 gms canned tuna in oil (drained, flaked) 2 cups small basil leaves 100 gms spinach leaves 1/3 cup pouring cream Shaved Parmesan (to serve) Salt + pepper Method: Cook pasta in a large saucepan of boiling salted water, until just tender. Drain. Return pasta to pan over medium to high heat. Add pasta sauce, tuna, cream, spinach and basil. Cook, stirring for 3-4 minutes, or until spinach is just wilted. Season and top with Parmesan and serve.
