Sufra Dayma: Apple Crumble Dessert Cake By Moushira Abdel-Malek Serves 12 Ingredients: 1 kg peeled and wedged green apples (stewed) 2 3/4 cups self-raising flour 1 1/2 cups castor sugar 4 eggs (at room temperature) 1 cup sour cream 1/3 cup custard powder 1 tsp vanilla essence 220 gms butter (chopped, melted) Crumble Topping: 3/4 cup plain flour 1/3 cup icing sugar 1 tsp baking powder 1 tsp ground cinnamon 75 gms butter (chilled, chopped) Method: Preheat oven to 180 degrees. Grease a 5 cm deep, 20 cm x 30 cm (base) non-stick baking pan. With an electric mixer, beat melted butter, eggs, flour, castor sugar, sour cream, custard powder and vanilla for 3 minutes, or until pale and fluffy. Pour half the mixture into pan. Spread apple over mixture. Top with remaining mixture. To make crumble topping: Combine flour, sugar, baking powder and cinnamon in a bowl. Using your fingertips, rub butter into flour mixture until it resembles coarse breadcrumbs. Sprinkle topping over cake mixture. Bake for one hour to one hour 15 minutes, or until a skewer inserted comes out clean. Serve warm with cream.
