Sufra Dayma: Apple Cake By Moushira Abdel-Malek Serves 10 - 12 Ingredients: 1 1/2 cups all purpose plain flour 2 tbsp baking powder 1 1/2 cinnamon 2 eggs + vanilla essence 1 cup brown sugar 3 medium apples (peeled and grated) 100 gms raisins 1 cup butter (softened) 1 tsp lemon juice Pinch of salt Method: Beat eggs with vanilla, then add sugar. Beat until pale and creamy. Sift flour, baking powder and salt. Combine well by means of a spatula with egg mixture. Add butter and continue beating until all ingredients are well combined. Gently mix apples, lemon juice, cinnamon, and raisins. Pour mixture in a lightly greased and floured non-stick cake pan. Bake in a preheated oven of 180 degrees for 40 - 45 minutes, or until tested by a wooden skewer inserted and comes out clean. Remove cake from the oven and allow to cool in pan. Turn onto a wire rack. Slice and serve.
