Sufra Dayma: Mandarin, Marmalade and Almond Loaves By Moushira Abdel-Malek Makes 2 Ingredients: 1 cup self-raising flour 2 eggs (at room temperature) 1/2 cup castor sugar 1 tsp vanilla essence 3/4 cup yoghurt 3/4 cup ground almonds 2 large mandarins (peeled, chopped, seeded) 1/3 cup citrus marmalade (warmed) 1/2 tsp ground cinnamon 125 gms butter Corn oil for coating Method: Preheat oven to 180 degrees. Coat two 3-cup capacity non-stick loaf pans with oil. With an electric mixer, beat butter and sugar in a large bowl until pale. Add eggs, one at a time, plus vanilla, beating to combine. Add flour, almond, yoghurt, mandarin and cinnamon. Stir to combine. Spoon mixture into prepared pans and smooth surfaces. Bake for 20-25 minutes or until a skewer inserted into the centre comes out clean. Remove to a wire rack. Dollop with marmalade and serve warm.
