Sufra Dayma: Cheesy Vegetable Bake By Moushira Abdel-Malek Serves 4-6 (as a side) Ingredients: 400 gms carrots (trimmed, peeled, diced) 200 gms broccoli (trimmed, cut into small florets) 200 gms cauliflower (trimmed, cut into small florets) 1/4 cup plain flour 2 1/2 cups milk 1/2 cup cheese spread 1 cup grated tasty cheese Butter + oil Salt + pepper + grated nutmeg Method: Boil or microwave carrots until tender. Place broccoli and cauliflower together and cook until just tender. Drain vegetables and spread them mixed in a 6-cup capacity ovenproof dish. Set aside. In a medium pan, heat butter and oil. Add flour and cook stirring for 1 to 2 minutes. Remove from heat and add milk, whisking constantly. Return to heat and cook stirring until sauce comes to a boil and thickens. Stir in the cheese spread and combine well with sauce. Season to taste. When thick enough to your taste, stir in half grated cheese and remove from heat. Spoon sauce over vegetables. Sprinkle with remaining cheese and bake in a preheated oven of 200 degrees, until top is golden. Set aside for 5 minutes to cool slightly. Serve with grilled chicken, steak or lamb.
