Sufra Dayma: Almond Finger Biscuits By Moushira Abdel-Malek Ingredients: 1 1/2 cups plain flour 1/2 cup self-raising flour 3 tbsp. sugar 1 egg (separated) Dash of vanilla 2 tbsp. milk 90 gms. slivered almonds 1 cup icing sugar 125 gms. butter Method: Sift flours into a large bowl. Add the sugar and mix well. Rub in the butter until mixture comes together. Add the egg yolk and vanilla with enough milk to mix into a firm dough. Roll out to a square of 30 x 30 cms. and trim edges. Beat egg white lightly. Stir in sifted icing sugar. Spread over the dough and sprinkle with roughly chopped almonds. Cut into fingers of 2.5 x 5 cms. Place on greased oven trays. Bake in a moderately slow oven until lightly browned (approx. 20-25 minutes). Remove from trays while warm.
