Sufra Dayma: Spicy Indian Kofta By Moushira Abdel-Malek Serves 6-8 Ingredients: 750 gms minced beef 1 onion (grated) 1 tsp crushed garlic 2 tbsp fresh mint leaves (chopped) 2 tsp fresh ginger (grated) 1⁄2 tsp garam masala 1 tsp hot chilli powder 1⁄2 tsp ground cumin 110 gms yoghurt Salt + pepper Oil to fry Method: Combine all ingredients in a medium bowl. Mix well by hand. Shape mixture into ovals. Place on a tray, in one layer. Cover and refrigerate for one hour. Heat a wide frying pan. Add oil. Heat. Fry kofta in batches, to brown on all sides, over medium heat. Remove on paper towels. Serve with a yoghurt salad and French fries.
