Sufra Dayma: Citrus Shish-Tawook By Moushira Abdel-Malek Ingredients: 4 chicken breast fillets 3 green shallots (chopped) 2 tsp grated parmesan cheese 2 tbsp lemon juice 2 tbsp orange juice 2 tbsp fresh basil (chopped) 2 tbsp fresh parsley (chopped) 2 tbsp balsamic vinegar 2 tbsp olive oil Salt + pepper + thyme Method: Cut chicken into 2 cm pieces. Combine all other ingredients in a large bowl. Add chicken pieces. Stir by spoon to combine . Cover and refrigerate for overnight. Thread chicken onto skewers, alternating chicken pieces with chopped shallots. Grill on both sides, basting frequently with marinade. When well done, serve on skewers with mashed potatoes and a rich green salad.
