Sufra Dayma: Chicken in Creamy Curry Sauce By Moushira Abdel-Malek Serves 6-8 Ingredients: 2 chicken, whole (each divided in quarters) 1 onion (whole) 4 cups b...chamel sauce (light consistency) 1 tbsp curry powder 1 cup pouring cream Butter +oil Salt + pepper + allspice + one wooden piece of cinnamon + 4 cardamom pods + 2 bayleaves + nutmeg Method: Wash chicken pieces thoroughly. Drain. Season each piece with salt, pepper, allspice and nutmeg. In a large cooking pan, heat butter and oil. Add chicken pieces and slightly brown on both sides. Add onion, cinnamon, cardamom and bayleaves. Pour a large amount of boiling water to cover chicken. Bring to the boil. Remove scum if necessary. Cover and allow to cook over medium heat. In the meantime, add a small amount of butter and oil. Heat and stir in curry powder only until fragrant. Add b...chamel sauce and stir to combine with curry. Bring to the boil, stirring then add cream. Remove chicken pieces from stock. Add to curry sauce. Bring to the boil and remove from heat. Place chicken in serving dish and pour sauce on top. Serve with white rice and a yoghurt salad.
