Sufra Dayma: Lemon Tarragon Chicken By Moushira Abdel-Malek Serves 4 Ingredients: 4 chicken breast fillets 8-10 unpeeled garlic cloves 1 tbsp finely grated lemon rind 2 tbsp lemon juice 1 1/2 tbsp dried tarragon 1 tbsp honey 2 lemons (sliced) 80 gms butter (softened) Salt + pepper Method: Combine butter, rind, juice, tarragon and honey in a small bowl. Make three diagonal cuts across each piece of chicken. Press butter mixture into cuts. Spread remainder all over chicken. Place chicken in a shallow baking dish with lemon slices and garlic. Bake, uncovered, in a very hot oven, until lightly browned. Serve with mashed potatoes.
