Sufra Dayma: Chicken Strips in Cumin Sauce By Moushira Abdel-Malek Serves 4-6 Ingredients: 750 gms- 1kg breast chicken fillets (cut into strips) 2 halves tri-colour capsicum (cut into strips) 1 large onion (halved, cut into wings) 1-2 ripe red tomatoes (grated, skin discarded) 1 tsp crushed garlic 1 tbsp balsamic vinegar 1 tsp ground cumin Salt + pepper + allspice Butter + oil Method: Heat butter and oil in a large cooking pan. Add onion. Stir to slightly brown, over medium heat. Add cumin and seasoning. Stir gently until aromatic. Add capsicum. Stir only until translucent. Add grated tomato and stir to combine. When slightly reduced, add chicken strips. Stir over high heat, only for 2-3 minutes. Cover and allow to cook, over medium heat, in its own juices. Check occasionally. When slightly dry, add balsamic vinegar. Cover, over medium heat, and allow to cook. If dry, add small amount of hot water, stirring occasionally, until chicken is done. Serve with fluffed rice and a green salad.. and Ramadan Kareem!
