Sufra Dayma: Bananas in Warm Rum Sauce By Moushira Abdel-Malek Serves 4-6 Ingredients: 3 large bananas (diagonally sliced) 1/2 cup brown sugar (granulated) 1/4 cup dark rum 1/4 cup water 2 1/2 cups vanilla ice-cream 1 tbsp butter Method: Melt butter in a large non-stick pan over medium heat. While butter melts, stir together rum and water. Add sugar to melted butter in skillet. Stir in rum mixture. Bring to boil. Cook 4 minutes, or until bubbly and slightly reduced. When sauce reduces, add bananas to sauce. Cook for 3 minutes, turning to coat thoroughly and heated through. Remove from heat. Serve with ice-cream aside.
