Sufra Dayma: Salmon Steaks and Avocado Salad By Moushira Abdel-Malek Serves 4 Ingredients: 500 gms skinless salmon fillets 300 gms green string beans 2 celery stalks (trimmed) 2 medium avocados (peeled, sliced) 50 gms butter Salt + pepper Dill and Mustard Dressing: 1 clove garlic (crushed) 1/3 cup lemon juice 2 tsp dijon mustard 1 tsp dill leaves (chopped) 1/2 cup olive oil Method: Boil beans in some salty water, only until just tender. Drain. Combine in a bowl with celery and avocado. Make dressing: Place ingredients in a screw- top jar, adding a little salt and pepper. Shake well. In a large frying pan, melt butter and add salmon fillets. Gently fry for 2 minutes on each side, over medium-low heat, until slightly golden. Season with salt and butter. Remove with a slotted spatula over kitchen paper towels. Transfer to a serving plate. Flake salmon into large pieces. Gently toss salmon with bean mixture and half of the dressing. Arrange into serving plate and drizzle remaining dressing on top and serve.
