Sufra Dayma: Prune and Apricot Cake By Moushira Abdel-Malek Makes one loaf Ingredients: 200 gms plain flour 1 tsp baking powder 1/4 tsp salt 1/4 tsp nutmeg 1/2 tsp cinnamon (Above to be sieved together) 1 egg + vanilla extract 100 gms dried apricot 100 gms prunes (stoned) 200 ml milk 150 gms soft brown sugar 75 gms butter or lard Method: Preheat oven at 180 degrees. Place: apricots, prunes, milk, sugar, butter, egg and vanilla in a liquidizer. Switch on to maximum speed for 20 seconds, or until the dried fruit is finely chopped. Pour mixture into sieved ingredients. Blend on low until ingredients are well combined. Pour into a lightly greased 800 gm loaf tin and bake for one hour, or until loaf is firm, and inserting a skewer into the middle of the cake comes out clean. Allow to cool completely in tin before removing. Slice and serve.
