Sufra Dayma: Orange and Almond Cake By Moushira Abdel-Malek Serves 10 Ingredients: 1/4 cup plain flour 220gms almond meal 1 tsp baking powder 1/2 tsp salt 5 eggs 1 tsp vanilla extract 1 1/4 cups castor sugar 2 large navel oranges Icing sugar to serve Method: Place whole oranges into a large saucepan. Cover with cold water and bring to the boil over high heat. Reduce heat and simmer, covered, for 45 minutes, adding more water if required, until soft. Drain and cool. Roughly chop and place into food processor. Process until finely chopped and pulpy. Preheat oven to 160 degrees. Grease a 22 cm round non-stick cake pan. With an electric mixer, beat eggs, sugar and vanilla in a large bowl, until thick and creamy. Add orange pulp and almond meal. Sift flour, salt and baking powder over mixture. Fold together with a large metal spoon. Pour mixture into prepared pan and bake until cake is cooked through, when tested with a skewer inserted into centre; (approx. 1 hour and 15 minutes). Allow to cool in pan. Turn onto a wire rack after cooled off. Sprinkle with icing sugar and serve.
