Sufra Dayma: Cinnamon Sugar Biscuits By Moushira Abdel-Malek Makes 36 Ingredients: 2 1/4 cups plain flour (sifted) 2 tsp baking powder 1/2 tsp bicarbonate of soda 2 eggs 1/2 cup brown sugar 2 tbsp molasses 3 tsp ground cinnamon 1 tbsp castor sugar 125 gms butter (softened) Method: With an electric mixer, cream butter and sugar until pale. Add one egg and molasses. Add flour, baking powder, soda and two teaspoonfuls of cinnamon. Mix well. Knead on a floured surface. Divide mixture in two. Press each half into a 10 cm. disc. Wrap in baking paper. Refrigerate 30 minutes. Preheat oven to 180 degrees. Combine sugar and remaining cinnamon together and leave aside. Roll dough out to 5 mm. thick. Cut out biscuits to the desired shape. Place onto non-stick baking trays. Separate remaining egg. Brush biscuits with lightly beaten eggwhite. Sprinkle with combined cinnamon and sugar. Bake for 10-12 minutes, or until golden. Cool on trays for 5 minutes. Transfer to a wire rack. Wish you a happy Eid
